Soaked Oatmeal Bake



We love this soaked (read more about soaking here) Oatmeal Bake recipe at our house. It has some wonderfully healthy ingredients, makes the perfect breakfast or snack, and has a decent storage life. It is especially good warm, but still quite good and convenient as leftovers. So I usually make a large batch and use it for our breakfast for a couple days in a row. I use oat flour for ours, but steel cut oats or rolled oats can be used. Very tasty with fruit, milk, or cream poured on top, as well.





24 Hours or more before preparation time:

Combine these 4  ingredients and allow to sit on counter or other warm place for 24 hours or more.
4 Cups Oats, steel cut oats, or Oat flour
2 Tablespoons Whole Wheat flour
2 Cups Yogurt (I use homemade yogurt)
1 Cup filtered water

1 Hour or more before eating:

Add remaining ingredients and pour into baking pan.
4 Eggs
1/2 cup melted butter
1 cup Maple Syrup or other Natural Sweeteners
4 Teaspoons Cinnamon
1 Teaspoon Sea Salt
2 Teaspoon Vanilla ( I use Homemade Vanilla)
1 1/2 cup Shredded Coconut Flakes
3 Teaspoons baking powder (aluminum free)


Add-in ideas: blueberries, peaches, banana, apples, nuts, chocolate chips.

350 for 40 minutes in greased 9x13 baking  pan or half recipe for 8x8 pan
